Nimono 煮物 is a dish of food simmered in a broth usually of dashi, soy sauce, sake and mirin. It's even its own course in washoku kaiseki (traditional multi-course meal). 🍱 Here I've used carrots, murasakiimo (purple sweet potato), mangetout peas, daikon radish, shiitake mushroom, konnyaku (the jelly twisty made from tubers), koyadofu (dehydrated frozen tofu) and my yakitori seitan. 🍲 All the different textures, tastes and colours compliment eachother. Did you know sushi 寿司 refers to the seasoned rice- not raw fish? Toppings & fillings are endless! 🥑🍣 Sushi is not an everyday food in Japan and is usually reserved for special occasions. 🌟 I decided to make some fun gunkan maki 軍艦巻き(warship sushi) for the New Year's supper clubs. Instead of using traditional nori seaweed, I wrapped the seasoned rice with cucumber (topped with smoked carrot) and also smoked carrot (with garlic pickled cucumber and shiso rice). 🥕🥒🚢 You can book your private dining experience and request sushi for your celebrations! 🎉 Next public supper clubs: Bibimbap & Board Games (12 Feb- tomorrow!), Japanese (15 Mar). Ozoni お雑煮 is the soup eaten on New Year's morning in Japan.🎊 The past two supper clubs have had ozoni as the first course to continue welcoming the new year! I make the Kansai*-style ozoni which has a sweet white miso broth (Tokyo/Kanto style is a clear broth). 🍱 What's in it? Fresh round mochi, shiitake, carrot, yuba (tofu skin, here it's dried & rolled), shungiku (winter chrysanthemum leaf), and a hexagonal slice of taro to represent a turtle shell for long life. 🐢 I also top it with a piece of yuzu zest for a lovely scent and bright citrus hit. 🥭 A perfect warm way to start a meal 💓 * *The Kyoto/Osaka/Nara region, which is where I lived. * #ozoni #お雑煮 #和食 #ヴィーガン #ビーガン #精進料理 #vegan #veganuary #kansai #関西 #miso #veganjapanese #londonfoodie #timeoutlondon #londonpopup #supperclub #eatwithlondon #eatwith #vegansofldn #japanesefood #washoku
