Spicy Sweet Soy Soy-Fish & Edamame Salad

I’m lucky to be able to get vegan “fish” in London (previously having to drive over an hour to get to Tink Holl in Cleveland to find fun mock meats).

Thankfully this sauce is really versatile and you can use it for a mess of things: tofu; mix veg for stir fry; even on steamed broccoli would be great!

I served this with sticky black rice and cold edamame salad (recipe below).

Spicy Sweet Soy Soy-Fish

  • 1 vegetarian fish, whole or cut in half OR whatever main ingredient you like
  • 3 T lemon juice
  • 2 T soy sauce
  • 1T sambal oelek*
  • 1/4 cup brown sugar

Mix everything together. If possible, marinade v-fish/main ingredient for 30 min.

*Sambal Oelek is a chilli paste full of chilli seeds. It is usually pretty spicy, but I think cooking it takes it down a notch and I didn’t find this spicy at all. But feel free to add more or less, use a spicy alternative, or make your own!

Cook according to your ingredient. Bake your v-fish, sautee your veggies or tofu, steam some broccoli- do what you need to do! You should have extra sauce to pour over rice or other side dishes. Mmmmmm.

The salad keeps it light against the rice and adds the element of crunch and coolness. This would be perfect for summer picnics and BBQs! I can’t even tell you how much of this I ate!!

Cold Edamame Salad

  • Edamame, shelled, cooked and then rinsed in a cold water
  • Corn kernels, frozen
  • Red onion, minced
  • Spring/green onion, minced
  • Bell pepper, any color, chopped
  • Parsley, dried or fresh
  • Basil or oregano, fresh, roughly chopped

Mix everything together in a bowl.
Dress with a light splash quality olive oil and a squirt of lemon juice. Alternatively, a splash of lemon-infused oil.
Salt if needed.

Loosely based on this recipe, but deary me DO NOT make that dressing! BLARG!

A perfectly balanced dinner. OmniMonkey loves the fake fish too. I almost wish he didn’t so I could have it ALL TO MYSELF!
